Why doesn't real cheese melt nicely instead of bubbling in a microwave?

Hello djtacoman,

When cheese is heated this creates changes in its chemical structure. During that change gases are released and these form the bubbles. If you want to melt the cheese with less or even no bubbles you have to use the lowest power setting of your microweave, or even try the "thaw" option if you have it in your microweave. It will take longer but there will be almost no bubbles.

Hi djacoman,
maybe its because maybe you would have to double boil it.first take a small pot and fill it with water then place the cheese in a sperate pot and then boil the water and while its boiling place the cheese on top of the water in the pot.

To melt cheese , it would better not to use a microwave but an oven or a fondue pot.
