if you go completely natural only a handfull of days in a refridgerator.as with any raw egg dish.you may be able to use herbs and spices as they do in hot climates to preserve foodstuff.type into internet...preserving food... and you will find oodles of different ways.good luck.
there is alsways sulphur dioxide as a preservative but it isnt a very nice thing to do as it aint natural and too much and it can be tasted and it aint really that good for us.some people are allergic to the stuff.
go natural and use herbs and spices.

you said you need to learn all about shelf life and preservatives so why you waist time here. there should be a lot of questions of same kind in your mind and you would hardly get all the answers you need if you wanna learn go buy some helpful books or do some courses on the subject. in case of marketing our simple answers wont help you. your products should have the quality consumers want. you can get that quality by thorough and keen study and research. so go for it and best of luck!!
