Why do seafood delivery trucks all have FISH on their back doors? It's on every truck so it must be required but why is it required?

My parents actually have a seafood market and they use to have a truck to transport their seafood and fish so I use to ride around the "FISH" trucks. I know the FDA has a compliance policy regarding the National Shellfish Sanitation Program Model Ordinance where it requires that all handled containers for shellfish and seafood be properly labelled, including transporting vehicles. I can't give you the exact law/policy #, but due to sanitation, temperature control, and proper storage issues of seafood, it requires that we use label our trucks with "FISH". Since mishandling and ill-storage of seafood is a major cause of food poisoning and illness to people, the FDA has to watch out for how the food is being transported. And if the fish transporter is super unlucky, they can receive a ticket for violating seafood vehicle labelling laws. Hope this helps!
