Why do some fish have red eyes?

I have gold fish, subunkins, veiltails, and some koi in my pond. Some have one red eye, is this a disease or a mutation?

No but some fish have red eyes and others don't. Just like cats, not all cats have the same color eyes. The fishs eyes just change color.:)

For those who don't know, the albino gene in Livebearers (or those I know about anyway) is double recessive. Albino X Regular eye will produce all regular fish in the first generation (unless the regular eye happened to be carrying an unexpressed albino recessive). Some of the fry should be carrying the unexpressed recessive and if they're crossed, a percentage of their fry will be albino. If a regular fry is carrying the unexpressed recessive and is crossed with an albino, a higher percentage of that pairing will be albino.
