Hello Geoff,
The most common tests done in fasting people blood are cholesterol (cardiovascular health) and glucose (diabetes).
After a meal the blood content of lipids, cholesterol as well as sugar is increased and later after those nutrients are delivered to cells and organs, their concentration is lowered in the blood. In order to have a reproducible test that can be meaningful, it is necessary to remove the food effect on the fluctuation in the blood. Fasting between 8 to 16 hrs is necessary according to the test needed. Just follow the doctor instructions. Generally only water drinking can be allowed. Good luck.
